Tomatoes, oh so many tomatoes!

                   {Beef Steak Tomato Salad}


What you'll need:

3 tablespoons red-wine vinegar

3 tablespoons olive oil

1 shallot, minced

2 teaspoons capers, rinsed and coarsely chopped

3 ripe beefsteak tomatoes

Coarse salt and ground pepper

What to do:

In a small bowl, whisk together red-wine vinegar and olive oil; stir in shallot and capers.

Core tomatoes; cut each into 8 wedges and place in a serving bowl. Drizzle with dressing, and season with salt and pepper. Serve immediately.

I absolutely love to garden, however, this year we had a bit of an issue with the tomato plants taking over the garden.  Not only did the take it over they are now competing with the squash and zucchini.  I'll take a picture to show you this massive collection of tomatoes we have.  All my herbs, with the exception of parsley, were over powered in their fight for light.  I had to start new Basil because usually by now we have so much of it I have frozen pesto sauce.  With the next batch of tomatoes I am going to make homemade sauce to freeze so we can enjoy it all winter.
